Healthy and easy Corn and Cottage cheese salad

Ingredients
 
  1. ½ cup boiled sweet Corn 
  2. ½ cup cubed Cottage cheese, (Paneer) 
  3. 2 tbsp. diced Red bell Pepper
  4. 2 tbsp. diced Yellow bell Pepper
  5. 2 tbsp. diced Tomato
  6. Few Salad leaves, washed and dried
  7. 2 tbsp. Herbs, and Olive oil dressing.
  8. Salt as per taste

Directions

In a large salad bowl, combine all ingredients,  and refrigerate for 10-15 minutes. 

Serve immediately.

Water chestnut & Tofu Salad

Ingredients
 
  1. ¼ kg Water chestnuts, peeled and steamed
  2. ¼ kg Tofu, chopped into small cubes
  3. 2 cups Lettuce leaves
  4. 4-5 fresh ripe Strawberries, chopped
  5. 2 tbsp. roasted Peanuts, semi crushed

Ingredients for the Soy peanut Dressing

  1. 3 tbsp. Soy sauce
  2. 1 tbsp. grounded Peanut powder
  3. 1 tsp. Sugar
  4. Salt to taste
  5. 1 tsp. Thai sweet chili sauce
  6. 100 ml. Water
Directions for the dressing
  • In a small pan, heat the soy sauce on a very low flame, add the peanut powder, salt, sugar, and incorporate it all into the soy.
  • Keep stirring and add sweet chili sauce and water.
  • Cool and keep aside.
  • (Adjust the water consistency as per your requirements)
Directions for the salad
  • Place the salad greens in a large salad bowl.
  • Pour 60% of the salad dressing and mix it well with the salad leaves.
  • Transfer all of it to a salad serving dish or bowl.
  • Add tofu, water chestnuts, and strawberries.
  • Drizzle the rest of the dressing and garnish with peanuts.
  • Serve.

Dragon fruit & Feta cheese salad

Ingredients
 
  1. 1 Dragon fruit, peeled and chopped
  2. ½ cup Feta cheese cubes
  3. 2 tbsp. Walnut halves, broken into small pieces
  4. 1 large bowl of mixed Salad greens, washed and dried
  5. 1 Cucumber thinly sliced with a peeler, lengthwise
  6. ¼ cup green pitted Olives

Dressing Ingredients

  1. 3 tbsp. freshly squeezed Orange juice
  2. 2 tbsp. Olive oil
  3. 2 tbsp. Honey
  4. 1 tsp. fresh Ginger juice
  5. Salt to taste
  6. 1 tsp. mixed Italian herbs
Directions for the dressing
  • Mix all the ingredients in a broad glass bowl and whisk till they are incorporated. Refrigerate.

Directions for the salad
  • Place the salad leaves in a large salad bowl
  • Add all the other ingredients.
  • Pour the salad dressing and serve immediately.

  1. 1 large Pear (firm)
  2. 2 tbsp. sliced black Olives
  3. 2 tbsp. green Olives
  4. 6 tbsp. Feta cheese, crumbled
  5. 1 bunch Arugula leaves
  6. 1 Red bell pepper
  7. 1 tsp. Chilli flakes, for garnish

Dressing Ingredients

  1. 2 tbsp. extra virgin Olive oil
  2. 1 tsp. freshly ground Pepper
  3. 1 tbsp. Honey
  4. 1 inch finely grated Ginger
  5. 2 tsp. freshly squeezed Lemon juice
  6. Salt as per your taste

Directions

  • Thin slice the pear and soak it in a bowl of salted, chilled water for 10 minutes.
  • Arrange the pear in a serving platter, layering it one over the other.
  • Whisk all the dressing ingredients in a bowl and evenly pour it over the pear.
  • Garnish with black and green olives, feta cheese and arugula leaves.

Mango and Mozarella salad

  1. 1 ripe Mango, chopped
  2. 1 cup Mozzarella cheese, sliced
  3. 2 tbsp. Pesto sauce (recipe in link)
  4. 200 grams mixed Salad leaves
  5. 2 tbsp. sliced, sweet Red peppers
  6. 6 Cherry tomatoes, cut in half
  7. 2 tbsp. lightly toasted Pine nuts
  8. 2 tbsp. black sliced Olives
 Directions
  • On a serving platter, arrange the salad leaves. 
    Add mozzarella cheese, tomatoes, bell peppers, and finally add mangoes.
  • Drop the pesto sauce in various places on the salad, evenly covering the salad.
  • Garnish with pine nuts, olives, and serve.

Zucchini Carpaccio

Ingredients
 
  1. 1 Zucchini (Yellow or green)
  2. 2 tsp. lightly toasted Pine nuts
  3. 4 tbsp. goat Cheese, sliced
  4. 2 tbsp. black Olives
  5. 2 tbsp. Basil leaves

Dressing Ingredients

  1. 2 tbsp. extra virgin Olive oil
  2. 2 tsp. freshly grounded black Pepper
  3. 1 tsp. freshly squeezed Lemon juice
  4. 1 tsp. red Chilli flakes
  5. Salt as per taste

Directions

  • Slice the zucchini into very thin rounds.
  • In a serving dish, arrange them in a way that they will overlap each other.
  • Whisk all the dressing ingredients in a bowl, and pour it evenly over the zucchini.
  • Garnish with pine nuts and goat cheese.
  • Serve.

  1. 1 ripe Avocado
  2. 1 Corn on the cob, roasted
  3. 1 Tomato, diced
  4. 1 Cucumber sliced, cross vertical
  5. 5-6 Olives, pitted
  6. 200 gms. mixed Salad greens

Dressing Ingredients

  1. 2 tbsp. Olive oil
  2. 1 tbsp. Honey
  3. 1 tbsp. freshly squeezed Lemon juice
  4. 1 tbsp. mixed Italian herbs or pizza seasoning
  5. Salt as per taste
 
Directions
 
  • Combine all the dressing ingredients in a bowl, whisk them well and refrigerate for 10 minutes.
  • Wash and spin dry the salad greens.
  • Slice out the kernels from the roasted corn cob.
  • Chop the avocado into large square chunks and place it in a large salad bowl, add the corn to it.
  • Pour half of the salad dressing slowly, tossing the avocado and corn to the dressing , making sure that the avocado will not break or smash.
  • In a salad serving platter or bowl, place the salad leaves, add the tomato, olives and cucumber.
  • Pour the rest of the dressing over the salad.
  • Finally add the avocado and corn.
  • Serve.
